Crunchy Peanut Butter Toasts with Banana and Cacao Nibs

(SPOILER ALERT) I was watching an episode of “Twin Peaks” yesterday where Special Agent Dale Cooper and Harry, the Twin Peaks’ chief of police, go into the town diner. They’re about to leave when a waitress asks them if they want coffee. Harry is in a rush to leave but Cooper stops him.

“Harry, I’m going to let you in on a little secret,” Cooper said. “Every day, once a day, give yourself a present. Don’t plan it. Don’t wait for it. Just let it happen.”

I tend to agree. I’ve been doing the same thing for as long as I can remember, I just never thought of it as giving myself a present. If I’m going to be honest, I probably give myself multiple presents a day, but I guess that’s what enjoying life is all about.

Which brings me to this crunchy peanut butter toast. I’ve been craving it for a few days and this morning I finally decided to make it. It comes together relatively quickly and it’s so delicious. Toast some bread, spread crunchy peanut butter on top (crunchy is key here…don’t mess around with creamy), and layer the top with banana slices and cacao nibs. Drizzle some honey on top for extra sweetness.
